Traditional Marshmallows With Orange Flower Water
Ingredients
- 4 oz gum arabic
- 1 cup water
- 1/2 lb powdered sugar
- 3 egg whites
- 2 tsp orange flower water
- Cornstarch or confectioner's sugar for dusting
Method
- 1 Soak gum arabic in water until dissolved, then strain to remove specks.
- 2 Combine dissolved gum arabic and powdered sugar in a saucepan set over boiling water.
- 3 Stir the mixture until it becomes thick and white, testing by dropping a bit into cold water to form a firm ball.
- 4 Remove from heat and stir in egg whites whipped to stiff peaks.
- 5 Mix in orange flower water, then turn the paste into a pan heavily dusted with cornstarch.
- 6 Let the paste stand for 12 hours, then turn onto a slab, cut into squares, dust with cornstarch or sugar, and pack in boxes.
