Traditional Marshmallows With Orange Flower Water

  • 4 oz gum arabic
  • 1 cup water
  • 1/2 lb powdered sugar
  • 3 egg whites
  • 2 tsp orange flower water
  • Cornstarch or confectioner's sugar for dusting

Method

  1. 1 Soak gum arabic in water until dissolved, then strain to remove specks.
  2. 2 Combine dissolved gum arabic and powdered sugar in a saucepan set over boiling water.
  3. 3 Stir the mixture until it becomes thick and white, testing by dropping a bit into cold water to form a firm ball.
  4. 4 Remove from heat and stir in egg whites whipped to stiff peaks.
  5. 5 Mix in orange flower water, then turn the paste into a pan heavily dusted with cornstarch.
  6. 6 Let the paste stand for 12 hours, then turn onto a slab, cut into squares, dust with cornstarch or sugar, and pack in boxes.
