Traditional Lemon Soufflé Omelet With Butter

Ingredients

  • 4 eggs
  • 3 oz sifted castor sugar
  • grated rind of 1/2 lemon
  • 1 oz butter

Method

  1. 1 Beat egg yolks with sugar and lemon rind for 10 minutes.
  2. 2 Whip egg whites to a very stiff froth.
  3. 3 Fold whites into yolk mixture.
  4. 4 Pour into a well-buttered pie dish or cake tin.
  5. 5 Bake in a moderately hot oven (425°F) for 10 to 15 minutes.
  6. 6 Serve immediately.
