Traditional Lemon Soufflé Omelet With Butter
Ingredients
- 4 eggs
- 3 oz sifted castor sugar
- grated rind of 1/2 lemon
- 1 oz butter
Method
- 1 Beat egg yolks with sugar and lemon rind for 10 minutes.
- 2 Whip egg whites to a very stiff froth.
- 3 Fold whites into yolk mixture.
- 4 Pour into a well-buttered pie dish or cake tin.
- 5 Bake in a moderately hot oven (425°F) for 10 to 15 minutes.
- 6 Serve immediately.
