Traditional Irish Lamb Stew With Potatoes
Ingredients
- 1 lb inferior cuts of meat (e.g., lamb or beef)
- Salt and pepper, to taste
- 6 medium onions, peeled
- Water, enough to cover meat
- Potatoes, peeled and split, as needed
Method
- 1 Cut meat into egg-sized pieces and rub well with salt and pepper.
- 2 Place meat in a large pot with peeled onions and enough water to cover.
- 3 Bring to a gentle boil and simmer for 1.5 hours.
- 4 Add peeled, split potatoes and boil briskly until potatoes are tender.
