Traditional Honey Mead With Lemon

Ingredients

  • 8 gallons spring water
  • 12 pounds honey
  • 4 pounds powdered sugar
  • 2-3 lemon peels

Method

  1. 1 Combine water, honey, and sugar in a large pot. Boil for one hour, skimming off impurities regularly.
  2. 2 Let the mixture stand overnight. The next day, transfer it to a fermentation vessel, leaving the sediment behind.
  3. 3 Add lemon peels to the vessel. Seal it tightly and let it ferment.
  4. 4 In summer, bottle the mead after six weeks. Store in a cool place.
