Traditional Honey Mead With Lemon
Ingredients
- 8 gallons spring water
- 12 pounds honey
- 4 pounds powdered sugar
- 2-3 lemon peels
Method
- 1 Combine water, honey, and sugar in a large pot. Boil for one hour, skimming off impurities regularly.
- 2 Let the mixture stand overnight. The next day, transfer it to a fermentation vessel, leaving the sediment behind.
- 3 Add lemon peels to the vessel. Seal it tightly and let it ferment.
- 4 In summer, bottle the mead after six weeks. Store in a cool place.
