Traditional Ginger Beer

Ingredients

  • 4 oz ground ginger
  • 2 oz cream of tartar
  • 3 large lemons, sliced and bruised
  • 3 lbs loaf sugar
  • 4 gallons boiling water
  • 2 tbsp yeast on a slice of toast

Method

  1. 1 Combine ginger, cream of tartar, lemons, and sugar in a large container.
  2. 2 Pour 4 gallons of boiling water over the mixture and let it stand until milk warm.
  3. 3 Add 2 tablespoons of yeast placed on a slice of toast.
  4. 4 Let the mixture stand for 24 hours, then strain through a sieve.
  5. 5 Bottle the liquid, securing corks with wire or string to prevent explosion.
  6. 6 Let it ferment for three days before use.
