Traditional Ginger Beer
Ingredients
- 4 oz ground ginger
- 2 oz cream of tartar
- 3 large lemons, sliced and bruised
- 3 lbs loaf sugar
- 4 gallons boiling water
- 2 tbsp yeast on a slice of toast
Method
- 1 Combine ginger, cream of tartar, lemons, and sugar in a large container.
- 2 Pour 4 gallons of boiling water over the mixture and let it stand until milk warm.
- 3 Add 2 tablespoons of yeast placed on a slice of toast.
- 4 Let the mixture stand for 24 hours, then strain through a sieve.
- 5 Bottle the liquid, securing corks with wire or string to prevent explosion.
- 6 Let it ferment for three days before use.
