Traditional French Omelet With Butter

  • 3 eggs
  • 1/2 tsp salt
  • dash of pepper
  • 1/2 tsp butter, cut into small bits
  • 1 tsp milk (optional)
  • 1/2 tsp butter for pan

Method

  1. 1 Beat 3 eggs with 1/2 tsp salt, pepper, and optional 1 tsp milk. Do not overbeat.
  2. 2 Heat a clean, dry omelet pan over medium heat. Add 1/2 tsp butter and swirl to coat without browning.
  3. 3 Pour in eggs. Immediately break the cooked surface with a knife or fork to let uncooked egg flow underneath.
  4. 4 When the top is soft but set, roll the omelet into the center of the pan and cook briefly to set.
  5. 5 Slide onto a hot plate, shape by folding ends under, garnish with parsley, and serve immediately.
