Traditional French Omelet With Butter
Ingredients
- 3 eggs
- 1/2 tsp salt
- dash of pepper
- 1/2 tsp butter, cut into small bits
- 1 tsp milk (optional)
- 1/2 tsp butter for pan
Method
- 1 Beat 3 eggs with 1/2 tsp salt, pepper, and optional 1 tsp milk. Do not overbeat.
- 2 Heat a clean, dry omelet pan over medium heat. Add 1/2 tsp butter and swirl to coat without browning.
- 3 Pour in eggs. Immediately break the cooked surface with a knife or fork to let uncooked egg flow underneath.
- 4 When the top is soft but set, roll the omelet into the center of the pan and cook briefly to set.
- 5 Slide onto a hot plate, shape by folding ends under, garnish with parsley, and serve immediately.
