Traditional Crumpets
Ingredients
- 1 pint milk
- 4 ounces butter
- 1 teaspoon salt
- 1 cake compressed yeast
- 3 cups flour
Method
- 1 Scald milk and let stand until lukewarm. Add salt and flour, then beat vigorously.
- 2 Add melted butter and yeast, beat again. Cover and let rise in a warm place until very light.
- 3 Grease muffin rings and place on a hot griddle. Fill each ring half full of batter.
- 4 Cook until brown on one side, then turn and brown the other side.
- 5 Remove from heat. To serve, steam crumpets and top with butter, marmalade, syrup, or jam.
