Traditional Crumpets

Ingredients

  • 1 pint milk
  • 4 ounces butter
  • 1 teaspoon salt
  • 1 cake compressed yeast
  • 3 cups flour

Method

  1. 1 Scald milk and let stand until lukewarm. Add salt and flour, then beat vigorously.
  2. 2 Add melted butter and yeast, beat again. Cover and let rise in a warm place until very light.
  3. 3 Grease muffin rings and place on a hot griddle. Fill each ring half full of batter.
  4. 4 Cook until brown on one side, then turn and brown the other side.
  5. 5 Remove from heat. To serve, steam crumpets and top with butter, marmalade, syrup, or jam.
