Traditional Bakewell Pudding

Ingredients

  • 6 oz flour
  • 2 oz margarine
  • 1/2 small spoon baking powder
  • 1.5 oz butter
  • 3 oz sugar
  • 2 eggs
  • 2 tsp corn flour
  • 1/2 cup hot water
  • 1/2 small spoon lemon juice
  • jam

Method

  1. 1 Mix flour, margarine, and baking powder to form a paste. Roll thin and line a pie dish.
  2. 2 Spread a layer of jam on the bottom of the pastry-lined dish.
  3. 3 Melt butter, then stir in sugar, corn flour, hot water, and lemon juice. Beat well.
  4. 4 Beat in eggs and pour the mixture over the jam layer.
  5. 5 Bake for 30 minutes. Serve cold.
