Tortilla Scramble With Peppers And Cheese
Ingredients
- 3 large tortillas
- 1/4 cup canola oil
- 1/4 cup bell pepper, chopped
- 1 onion, chopped
- 4 eggs, lightly beaten
- cheddar cheese, low-fat, grated
Method
- 1 Tear tortillas into small pieces.
- 2 Heat oil in a medium-sized pan over medium heat.
- 3 Add tortillas and stir until pieces begin to brown.
- 4 Add chopped peppers and onion; sauté until soft.
- 5 Add beaten eggs and stir until cooked.
- 6 Remove from heat, sprinkle with grated cheese, cover to melt, and serve immediately.
