Tortellini Bean And Lentil Soup

Ingredients

  • 1/4 cup dried Great Northern beans
  • 1/4 cup brown lentils
  • 1/4 cup green split peas
  • 2 tablespoons dried parsley flakes
  • 3 teaspoons chicken broth granules
  • 1/8 cup chopped sun-dried tomatoes
  • 1 teaspoon grated Parmesan cheese
  • 1/16 teaspoon onion powder
  • 1/2 teaspoon instant minced garlic
  • 3/4 cup dried tortellini
  • 1 cup coarsely chopped carrot
  • 1 cup coarsely chopped celery

Method

  1. 1 Rinse beans and place in a heavy pot with 8 cups water. Bring to a boil, then reduce heat to medium, cover, and simmer until tender, about 1 1/4 to 1 1/2 hours.
  2. 2 Add 4 cups water, parsley, chicken broth granules, sun-dried tomatoes, Parmesan, onion powder, garlic, tortellini, carrots, and celery to the pot.
  3. 3 Return to a boil, then reduce heat to low, cover, and simmer for 30 minutes until the tortellini and vegetables are tender.
