Tomato Vegetable Soup With Potatoes And Carrots
Ingredients
- 1 quart boiling water
- 1/2 cup carrots
- 1/2 cup cabbage
- 1 cup potatoes
- 1 cup tomato juice and pulp
- 1 tablespoon minced onion
- 1/2 teaspoon pepper
- 4 tablespoons fat
- 4 cloves
- 1 bay leaf
- 2 teaspoons salt
- 4 peppercorns
- 2 tablespoons chopped parsley
Method
- 1 Heat onion, pepper, salt, bay leaf, and peppercorns with tomatoes for 20 minutes.
- 2 Strain the tomato mixture to remove spices and aromatics.
- 3 Add carrots, cabbage, potatoes, and boiling water to the strained tomato juice and pulp.
- 4 Cook slowly for 1 hour.
- 5 Add chopped parsley just before serving.
