Tomato Vegetable Soup With Potatoes And Carrots

Ingredients

  • 1 quart boiling water
  • 1/2 cup carrots
  • 1/2 cup cabbage
  • 1 cup potatoes
  • 1 cup tomato juice and pulp
  • 1 tablespoon minced onion
  • 1/2 teaspoon pepper
  • 4 tablespoons fat
  • 4 cloves
  • 1 bay leaf
  • 2 teaspoons salt
  • 4 peppercorns
  • 2 tablespoons chopped parsley

Method

  1. 1 Heat onion, pepper, salt, bay leaf, and peppercorns with tomatoes for 20 minutes.
  2. 2 Strain the tomato mixture to remove spices and aromatics.
  3. 3 Add carrots, cabbage, potatoes, and boiling water to the strained tomato juice and pulp.
  4. 4 Cook slowly for 1 hour.
  5. 5 Add chopped parsley just before serving.
