Tomato Sauce Over Eggs And Crouton
Ingredients
- 4 eggs
- 1 large slice bread
- butter
- 2 lbs tomatoes
- 1 mustard-spoonful mustard
- 1 teaspoonful vinegar
- salt and pepper
- flour
Method
- 1 Hard-boil eggs in boiling water for 10 minutes, then peel.
- 2 Fry bread slice in butter until crisp to form a crouton.
- 3 Stew tomatoes, pass through a sieve, and return to pan.
- 4 Stir in mustard, vinegar, salt, and pepper; thicken with flour if needed.
- 5 Pile peeled eggs on the crouton and pour hot tomato sauce over.
