Tomato Rice With Bacon Fat And Green Peppers
Ingredients
- 2 onions, chopped fine
- ½ cup rendered bacon fat
- 6 tomatoes, peeled and chopped
- 2 cups rice, washed
- 2 green peppers, seeded and quartered
- Water as needed
- Salt to taste
Method
- 1 Chop onions fine and fry in bacon fat until soft but not browned.
- 2 Add peeled, chopped tomatoes and fry until cooked down.
- 3 Place washed rice in a saucepan, pour the onion-tomato mixture over it.
- 4 Add enough water to cover the rice, add quartered green peppers and salt.
- 5 Boil until rice is soft, then remove pepper ends before serving with cold meat.
