Tomato Rice With Bacon Fat And Green Peppers

Ingredients

  • 2 onions, chopped fine
  • ½ cup rendered bacon fat
  • 6 tomatoes, peeled and chopped
  • 2 cups rice, washed
  • 2 green peppers, seeded and quartered
  • Water as needed
  • Salt to taste

Method

  1. 1 Chop onions fine and fry in bacon fat until soft but not browned.
  2. 2 Add peeled, chopped tomatoes and fry until cooked down.
  3. 3 Place washed rice in a saucepan, pour the onion-tomato mixture over it.
  4. 4 Add enough water to cover the rice, add quartered green peppers and salt.
  5. 5 Boil until rice is soft, then remove pepper ends before serving with cold meat.
