Tomato Rice Soup With Bacon
Ingredients
- 1/4 cup rice
- 1/3 cup chopped onion
- 2 tablespoons bacon drippings
- 2 cups tomatoes
- 2 teaspoons salt
- 1 teaspoon sugar
- 1/8 teaspoon paprika
- 1 tablespoon chopped parsley
- 3 cups boiling water
- 1 small green pepper, chopped (optional)
Method
- 1 Wash rice and add 3 cups boiling water. Boil for 30 minutes.
- 2 Cook onion in bacon drippings in a pan until tender but not brown.
- 3 Add tomatoes to the onion and boil for 10 minutes.
- 4 Rub the tomato mixture through a strainer into the boiled rice and water.
- 5 Stir in salt, sugar, and paprika. Sprinkle with parsley before serving.
