Tomato Rice Soup With Bacon

Ingredients

  • 1/4 cup rice
  • 1/3 cup chopped onion
  • 2 tablespoons bacon drippings
  • 2 cups tomatoes
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/8 teaspoon paprika
  • 1 tablespoon chopped parsley
  • 3 cups boiling water
  • 1 small green pepper, chopped (optional)

Method

  1. 1 Wash rice and add 3 cups boiling water. Boil for 30 minutes.
  2. 2 Cook onion in bacon drippings in a pan until tender but not brown.
  3. 3 Add tomatoes to the onion and boil for 10 minutes.
  4. 4 Rub the tomato mixture through a strainer into the boiled rice and water.
  5. 5 Stir in salt, sugar, and paprika. Sprinkle with parsley before serving.
