Tomato Rice Casserole With Cheese
Ingredients
- 1 small onion
- 2 tablespoons butter
- 1 cup stock
- 4 ounces rice
- 3 medium tomatoes, pureed
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons grated Cheddar cheese
Method
- 1 Fry the onion in butter until slightly softened.
- 2 Add stock and bring to a boil. Add rice and cook until tender but not pulpy.
- 3 Stir in the tomato puree and additional stock if needed.
- 4 Mix in the grated Parmesan and Cheddar cheeses.
- 5 Serve hot.
