Tomato Onion Rice With Cheese
Ingredients
- 6 onions
- 6 tomatoes
- 1 1/2 pints vegetable stock
- herbs and seasoning
- 1 1/2 cups rice
- butter
- grated cheese for serving
Method
- 1 Fry onions and tomatoes in butter until well browned.
- 2 Place fried onions and tomatoes with seasoning into cold stock, then add rice.
- 3 Boil slowly for 20 minutes until rice has absorbed the stock.
- 4 Serve with grated cheese over the top.
