Tomato Mushroom Toast
Ingredients
- 1 pint tomatoes
- Salt and pepper to taste
- 1 tablespoon butter
- 1 tablespoon bread crumbs
- 1/2 pint fresh mushrooms, chopped
- 4 slices bread, toasted
- Warm milk, for moistening bread
Method
- 1 Place tomatoes in a saucepan and cook for 15-20 minutes until most water evaporates.
- 2 Season with salt and pepper, then stir in butter, bread crumbs, and chopped mushrooms.
- 3 Cook until mushrooms are tender.
- 4 Toast bread slices and lightly moisten with warm milk.
- 5 Pour the tomato and mushroom mixture over the toast and serve hot.
