Tomato Mushroom Toast

Ingredients

  • 1 pint tomatoes
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon bread crumbs
  • 1/2 pint fresh mushrooms, chopped
  • 4 slices bread, toasted
  • Warm milk, for moistening bread

Method

  1. 1 Place tomatoes in a saucepan and cook for 15-20 minutes until most water evaporates.
  2. 2 Season with salt and pepper, then stir in butter, bread crumbs, and chopped mushrooms.
  3. 3 Cook until mushrooms are tender.
  4. 4 Toast bread slices and lightly moisten with warm milk.
  5. 5 Pour the tomato and mushroom mixture over the toast and serve hot.
