Ingredients

  • 2 medium tomatoes
  • 1 cup diced tomato flesh
  • 1/2 teaspoon shredded onion
  • 1 egg
  • Oil (for mayonnaise)
  • Salt and pepper to taste
  • Vinegar (for mayonnaise)
  • Ice
  • Nasturtium leaves (optional, for garnish)

Method

  1. 1 Cut tomatoes in half or two-thirds. Scoop out the flesh and dice it. Reserve the empty shells.
  2. 2 Fill the tomato shells with ice to keep them cold. Place the shells on a plate.
  3. 3 Whisk the egg, then slowly drizzle in oil while beating until the mixture thickens into mayonnaise.
  4. 4 Season the mayonnaise with salt, pepper, and vinegar. Mix in the diced tomato flesh and shredded onion.
  5. 5 Spoon the tomato mixture into the chilled shells. Garnish with nasturtium leaves and serve immediately.
