Tomato Mayo Salad In Tomato Shells
Ingredients
- 2 medium tomatoes
- 1 cup diced tomato flesh
- 1/2 teaspoon shredded onion
- 1 egg
- Oil (for mayonnaise)
- Salt and pepper to taste
- Vinegar (for mayonnaise)
- Ice
- Nasturtium leaves (optional, for garnish)
Method
- 1 Cut tomatoes in half or two-thirds. Scoop out the flesh and dice it. Reserve the empty shells.
- 2 Fill the tomato shells with ice to keep them cold. Place the shells on a plate.
- 3 Whisk the egg, then slowly drizzle in oil while beating until the mixture thickens into mayonnaise.
- 4 Season the mayonnaise with salt, pepper, and vinegar. Mix in the diced tomato flesh and shredded onion.
- 5 Spoon the tomato mixture into the chilled shells. Garnish with nasturtium leaves and serve immediately.
