Tomato Macaroni Soup
Ingredients
- 1 can tomatoes
- 1 sprig parsley
- 1 tsp celery seed
- 1 tsp sugar
- 1 blade mace
- 1 bay leaf
- 1 small onion, chopped
- 2 cups beef stock
- Salt and pepper to taste
- 1 tbsp butter
- 1 tbsp flour
- 1 cup cooked macaroni, cut into small bits
Method
- 1 Combine tomatoes, parsley, celery seed, sugar, mace, bay leaf, and onion in a pot. Cook for one hour.
- 2 Rub the mixture through a coarse sieve to remove solids and seeds.
- 3 Stir in beef stock, salt, and pepper. Thicken with a mixture of butter and flour, boiling while stirring until thickened.
- 4 Add the cooked macaroni bits and serve.
