Tomato Macaroni Soup

Ingredients

  • 1 can tomatoes
  • 1 sprig parsley
  • 1 tsp celery seed
  • 1 tsp sugar
  • 1 blade mace
  • 1 bay leaf
  • 1 small onion, chopped
  • 2 cups beef stock
  • Salt and pepper to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup cooked macaroni, cut into small bits

Method

  1. 1 Combine tomatoes, parsley, celery seed, sugar, mace, bay leaf, and onion in a pot. Cook for one hour.
  2. 2 Rub the mixture through a coarse sieve to remove solids and seeds.
  3. 3 Stir in beef stock, salt, and pepper. Thicken with a mixture of butter and flour, boiling while stirring until thickened.
  4. 4 Add the cooked macaroni bits and serve.
