Tomato Beef Stew With Fried Onions
Ingredients
- 2 lbs fresh beef
- 2 gallons water
- 1 quart ripe tomatoes, peeled and chopped
- 4-5 large onions, sliced
- 3 tbsp flour (for thickening)
- Salt and pepper to taste
- Fresh parsley or other herbs to taste
Method
- 1 Place beef in a large pot with 2 gallons of water and boil for 2 hours.
- 2 Add 1 quart of chopped ripe tomatoes and 4-5 sliced onions to the pot.
- 3 Fry the onions in a separate pan until brown, dusting with 3 tablespoons of flour while frying.
- 4 Add the fried onion and flour mixture to the soup along with salt, pepper, and herbs.
- 5 Simmer on moderate heat (350°F equivalent) for 4 more hours until finished.
