Tomato Beef Stew With Fried Onions

Ingredients

  • 2 lbs fresh beef
  • 2 gallons water
  • 1 quart ripe tomatoes, peeled and chopped
  • 4-5 large onions, sliced
  • 3 tbsp flour (for thickening)
  • Salt and pepper to taste
  • Fresh parsley or other herbs to taste

Method

  1. 1 Place beef in a large pot with 2 gallons of water and boil for 2 hours.
  2. 2 Add 1 quart of chopped ripe tomatoes and 4-5 sliced onions to the pot.
  3. 3 Fry the onions in a separate pan until brown, dusting with 3 tablespoons of flour while frying.
  4. 4 Add the fried onion and flour mixture to the soup along with salt, pepper, and herbs.
  5. 5 Simmer on moderate heat (350°F equivalent) for 4 more hours until finished.
