Tomato And Herb Omelette
Ingredients
- 2 tomatoes
- 1 oz butter
- 1 tbsp chopped marjoram
- 1 tbsp chopped parsley
- pinch of spice
- 3 eggs
Method
- 1 Peel the tomatoes and remove the seeds. Chop them finely.
- 2 Mix the tomatoes with butter, marjoram, parsley, and a pinch of spice.
- 3 Beat the eggs, keeping yolks and whites separate if desired, then combine.
- 4 Cook the egg mixture in a pan to form an omelette.
