Tomato And Egg Scramble On Toast
Ingredients
- 3 tbsp Crisco
- 4 eggs
- 4 tomatoes
- Salt and pepper to taste
- 1/2 cup milk
- 1 tsp chopped gherkins or capers
- 4 slices toast
Method
- 1 Skin, seed, and chop the tomatoes. In a bowl, whisk the eggs with milk, chopped gherkins or capers, salt, and pepper.
- 2 Melt Crisco in a skillet over medium heat. Add the tomato and egg mixture and stir constantly until thoroughly hot and cooked through.
- 3 Serve the mixture immediately over toast. Alternatively, bake in a moderate oven (350°F) for 20 minutes and garnish with small pieces of toast.
