Tomato And Egg Scramble On Toast

Ingredients

  • 3 tbsp Crisco
  • 4 eggs
  • 4 tomatoes
  • Salt and pepper to taste
  • 1/2 cup milk
  • 1 tsp chopped gherkins or capers
  • 4 slices toast

Method

  1. 1 Skin, seed, and chop the tomatoes. In a bowl, whisk the eggs with milk, chopped gherkins or capers, salt, and pepper.
  2. 2 Melt Crisco in a skillet over medium heat. Add the tomato and egg mixture and stir constantly until thoroughly hot and cooked through.
  3. 3 Serve the mixture immediately over toast. Alternatively, bake in a moderate oven (350°F) for 20 minutes and garnish with small pieces of toast.
