Tomato And Egg Sandwiches

Ingredients

  • 2 eggs
  • 1/4 lb tomatoes
  • 1/2 oz butter
  • salt and pepper to taste

Method

  1. 1 Skin and slice the tomatoes. Melt butter in a saucepan, add tomatoes, salt, and pepper. Simmer for 10 minutes, mashing with a wooden spoon. Cool.
  2. 2 Beat eggs and mix with the cooled tomato mixture. Stir over heat until well set. Turn out and let cool completely.
  3. 3 Assemble sandwiches using bread of your choice.
