Tomato And Egg Sandwiches
Ingredients
- 2 eggs
- 1/4 lb tomatoes
- 1/2 oz butter
- salt and pepper to taste
Method
- 1 Skin and slice the tomatoes. Melt butter in a saucepan, add tomatoes, salt, and pepper. Simmer for 10 minutes, mashing with a wooden spoon. Cool.
- 2 Beat eggs and mix with the cooled tomato mixture. Stir over heat until well set. Turn out and let cool completely.
- 3 Assemble sandwiches using bread of your choice.
