Tomato Anchovy Pimento Canapes
Ingredients
- large tomatoes
- bread slices
- pimento
- anchovy fillets
- Mayonnaise
Method
- 1 Slice large tomatoes and cut bread circles to fit the slices.
- 2 Toast or fry the bread circles until golden.
- 3 Place a tomato slice on each piece of bread.
- 4 Place a pimento in the center of each tomato slice.
- 5 Curl an anchovy around the pimento.
- 6 Border with stiff Mayonnaise using a pastry bag and serve ice cold.
