Tomato Anchovy Pimento Canapes

Ingredients

  • large tomatoes
  • bread slices
  • pimento
  • anchovy fillets
  • Mayonnaise

Method

  1. 1 Slice large tomatoes and cut bread circles to fit the slices.
  2. 2 Toast or fry the bread circles until golden.
  3. 3 Place a tomato slice on each piece of bread.
  4. 4 Place a pimento in the center of each tomato slice.
  5. 5 Curl an anchovy around the pimento.
  6. 6 Border with stiff Mayonnaise using a pastry bag and serve ice cold.
