Tofu Vegetable Rice Fritters

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 pound tofu
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 6 scallions, sliced
  • 1 carrot, shredded
  • 1/4 cup fresh basil leaves
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil

Method

  1. 1 Cook brown rice in water according to package directions. Let cool completely to dry out.
  2. 2 In a large bowl, mix tofu, corn, peas, scallions, carrot, basil, and salt.
  3. 3 Add cooled rice to the vegetable mixture and toss to combine evenly.
  4. 4 Heat oil in a skillet over medium-high heat. Add rice mixture and press down firmly with a spatula.
  5. 5 Reduce heat to low, cover, and cook for 10 minutes to form a crust.
  6. 6 Flip portions of the rice to create crispy chunks. Cook until golden and crispy, up to 20 minutes.
