Tofu Vegetable Rice Fritters
Ingredients
- 1 cup brown rice
- 2 cups water
- 1 pound tofu
- 1 cup frozen corn
- 1 cup frozen peas
- 6 scallions, sliced
- 1 carrot, shredded
- 1/4 cup fresh basil leaves
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil
Method
- 1 Cook brown rice in water according to package directions. Let cool completely to dry out.
- 2 In a large bowl, mix tofu, corn, peas, scallions, carrot, basil, and salt.
- 3 Add cooled rice to the vegetable mixture and toss to combine evenly.
- 4 Heat oil in a skillet over medium-high heat. Add rice mixture and press down firmly with a spatula.
- 5 Reduce heat to low, cover, and cook for 10 minutes to form a crust.
- 6 Flip portions of the rice to create crispy chunks. Cook until golden and crispy, up to 20 minutes.
