Tofu Salad With Mayonnaise And Mustard
Ingredients
- 3/4 pound firm tofu
- 2 tablespoons reduced-fat mayonnaise
- 3 teaspoons brown mustard
- 1/2 teaspoon low-sodium soy sauce
- 1/2 cup celery, diced
- 1 tablespoon onion, diced
- 1/2 green pepper, seeded and diced
- 1 tablespoon parsley, minced
Method
- 1 Drain tofu and press between plates with a heavy object for 10-15 minutes, draining water periodically.
- 2 In a small bowl, whisk together mayonnaise, mustard, and soy sauce.
- 3 In a medium bowl, combine diced tofu, celery, onion, pepper, and parsley.
- 4 Pour dressing over tofu mixture and toss gently to coat evenly.
- 5 Refrigerate covered for at least one hour to blend flavors before serving.
