  • 3/4 pound firm tofu
  • 2 tablespoons reduced-fat mayonnaise
  • 3 teaspoons brown mustard
  • 1/2 teaspoon low-sodium soy sauce
  • 1/2 cup celery, diced
  • 1 tablespoon onion, diced
  • 1/2 green pepper, seeded and diced
  • 1 tablespoon parsley, minced

Method

  1. 1 Drain tofu and press between plates with a heavy object for 10-15 minutes, draining water periodically.
  2. 2 In a small bowl, whisk together mayonnaise, mustard, and soy sauce.
  3. 3 In a medium bowl, combine diced tofu, celery, onion, pepper, and parsley.
  4. 4 Pour dressing over tofu mixture and toss gently to coat evenly.
