Toasted White Bean Bruschetta
Ingredients
- 1 whole-wheat French baguette, cut into 12 thin slices
- 3 tablespoons olive oil, divided
- 1 cup white onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups canned navy beans, rinsed and drained
- 2 tomatoes, cored and cubed
- 2 tablespoons balsamic vinegar
Method
- 1 Slice baguette into 12 thin diagonal slices. Heat 2 tablespoons olive oil in a large sauté pan over medium heat.
- 2 Cook bread slices in pan until golden on both sides, adding 1 tablespoon oil before flipping the second side.
- 3 Sauté onion in remaining 1 tablespoon oil until soft (7 mins). Add garlic, basil, and oregano; cook 1-2 minutes until fragrant.
- 4 Stir in beans and cook on low heat for 5 minutes. Add tomatoes, remove from heat, and stir in balsamic vinegar.
- 5 Spoon the warm bean and tomato mixture onto the toasted bread slices and serve immediately.
