Toasted Almond Ice Cream

Ingredients

  • 1 pint heavy cream
  • egg yolks
  • sugar
  • flavoring extract
  • almonds

Method

  1. 1 Heat half the cream in a double boiler. Add beaten egg yolks and sugar, stirring until very light. Add flavoring and chill until very cold.
  2. 2 Freeze the chilled mixture in an ice cream freezer. Whip the remaining cream and fold half of it into the frozen mixture. Repack and let ripen.
  3. 3 Blanch, dry, and chop almonds. Toast in an oven, shaking constantly, until golden brown.
  4. 4 Spoon the frozen mixture into paper cases. Pipe remaining whipped cream in rosettes on top. Dust generously with chopped almonds and serve.
