  • 1/2 medium carrot
  • 1 red bell pepper
  • 4 medium summer squash
  • 3/4 cup whole wheat pita rounds (about 6" diameter)
  • 4 reduced-sodium pasta sauce
  • 4 sticks reduced-fat string mozzarella cheese

Method

  1. 1 Preheat oven to 400°F. Cut carrot and bell pepper into 2-inch sticks for Xs. Cut squash into 12 slices for Os.
  2. 2 Pull apart each cheese stick to make 4 strips for the grid. Place pita rounds on a baking sheet and spread pasta sauce on each.
