Thyme Mashed Sweet Potatoes
Ingredients
- 3/4 pound sweet potatoes (small to medium)
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- pepper
Method
- 1 Wash and peel the sweet potatoes. Cut them into slices that are ¾ inch thick.
- 2 Place the potato slices in a saucepan and cover with water.
- 3 Bring the water to a boil over medium heat, then cook for 20 to 25 minutes until soft.
- 4 Drain the water and transfer the potatoes to a medium bowl.
- 5 Mash the potatoes with a fork or potato masher.
- 6 Mix in the dried thyme, salt, and pepper to serve.
