Thyme Mashed Sweet Potatoes

Ingredients

  • 3/4 pound sweet potatoes (small to medium)
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • pepper

Method

  1. 1 Wash and peel the sweet potatoes. Cut them into slices that are ¾ inch thick.
  2. 2 Place the potato slices in a saucepan and cover with water.
  3. 3 Bring the water to a boil over medium heat, then cook for 20 to 25 minutes until soft.
  4. 4 Drain the water and transfer the potatoes to a medium bowl.
  5. 5 Mash the potatoes with a fork or potato masher.
  6. 6 Mix in the dried thyme, salt, and pepper to serve.
