Thyme Infused Clam Chowder With Potatoes
Ingredients
- 1/2 lb salt pork, sliced
- 2 small onions, chopped
- 1 qt tomatoes, canned or fresh
- 1 qt potatoes, sliced
- 1 qt clams and their juice
- 3 pints water
- salt and pepper to taste
- 1/2 tsp dried thyme
- 1 tbsp flour
- 1 handful small whole crackers
Method
- 1 Cut salt pork into slices and fry until brown. Add chopped onions and cook with the pork.
- 2 Stew tomatoes and sliced potatoes separately until tender.
- 3 Combine the pork mixture, tomatoes, potatoes, clams, and clam juice in a pot.
- 4 Add water, salt, pepper, thyme, and flour for thickening. Stir well.
- 5 Stew everything together for 30 minutes. Add crackers just before serving.
- 6 Serve very hot.
