Thyme Infused Clam Chowder With Potatoes

Ingredients

  • 1/2 lb salt pork, sliced
  • 2 small onions, chopped
  • 1 qt tomatoes, canned or fresh
  • 1 qt potatoes, sliced
  • 1 qt clams and their juice
  • 3 pints water
  • salt and pepper to taste
  • 1/2 tsp dried thyme
  • 1 tbsp flour
  • 1 handful small whole crackers

Method

  1. 1 Cut salt pork into slices and fry until brown. Add chopped onions and cook with the pork.
  2. 2 Stew tomatoes and sliced potatoes separately until tender.
  3. 3 Combine the pork mixture, tomatoes, potatoes, clams, and clam juice in a pot.
  4. 4 Add water, salt, pepper, thyme, and flour for thickening. Stir well.
  5. 5 Stew everything together for 30 minutes. Add crackers just before serving.
  6. 6 Serve very hot.
