Three Sisters Vegetable Soup
Ingredients
- 1 1/2 tablespoons vegetable oil
- 3/4 cup diced carrot
- 1 cup chopped onion
- 4 cloves garlic, minced
- 2 cups diced summer or winter squash
- 1 1/2 cups corn
- 1 1/2 cups cooked beans
- 1 can (14.5 oz) low-sodium diced tomatoes
- 3 cups broth
- 1 teaspoon cumin
- 1/4 teaspoon black pepper
Method
- 1 Heat oil in a large pan over medium heat. Add carrot and onion; sauté until onions are slightly browned, about 8-10 minutes.
- 2 Add garlic, squash, and corn; stir for 3-4 minutes.
- 3 Stir in beans, tomatoes, broth, cumin, and pepper. Bring to a boil.
- 4 Reduce heat to a simmer and cook until vegetables are tender, 15-30 minutes.
