Three Sisters Vegetable Soup

Ingredients

  • 1 1/2 tablespoons vegetable oil
  • 3/4 cup diced carrot
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • 2 cups diced summer or winter squash
  • 1 1/2 cups corn
  • 1 1/2 cups cooked beans
  • 1 can (14.5 oz) low-sodium diced tomatoes
  • 3 cups broth
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper

Method

  1. 1 Heat oil in a large pan over medium heat. Add carrot and onion; sauté until onions are slightly browned, about 8-10 minutes.
  2. 2 Add garlic, squash, and corn; stir for 3-4 minutes.
  3. 3 Stir in beans, tomatoes, broth, cumin, and pepper. Bring to a boil.
  4. 4 Reduce heat to a simmer and cook until vegetables are tender, 15-30 minutes.
