Three Citrus Marmalade

Ingredients

  • 1 orange
  • 1 grapefruit
  • 1 lemon
  • Water (3 times the volume of sliced fruit)
  • Sugar (equal volume to the fruit mixture)

Method

  1. 1 Slice the orange and lemon very thinly. Remove the rind from the grapefruit and discard it. Measure the total volume of the sliced fruit.
  2. 2 Place the fruit in an earthen dish and add water equal to three times the volume of the fruit. Let stand overnight.
  3. 3 The next morning, boil the fruit and water for ten minutes. Remove from heat and let stand overnight again.
  4. 4 On the second morning, add sugar equal to the volume of the fruit mixture. Boil steadily for two hours or more, stirring as little as possible, until the mixture jellies.
