Three Citrus Marmalade
Ingredients
- 1 orange
- 1 grapefruit
- 1 lemon
- Water (3 times the volume of sliced fruit)
- Sugar (equal volume to the fruit mixture)
Method
- 1 Slice the orange and lemon very thinly. Remove the rind from the grapefruit and discard it. Measure the total volume of the sliced fruit.
- 2 Place the fruit in an earthen dish and add water equal to three times the volume of the fruit. Let stand overnight.
- 3 The next morning, boil the fruit and water for ten minutes. Remove from heat and let stand overnight again.
- 4 On the second morning, add sugar equal to the volume of the fruit mixture. Boil steadily for two hours or more, stirring as little as possible, until the mixture jellies.
