Thinly Sliced Fried Potato Chips

Ingredients

  • medium-sized white potatoes
  • ice
  • boiling fat (for frying)
  • salt

Method

  1. 1 Peel potatoes and slice them very thin using a potato slicer if available.
  2. 2 Wash potatoes, cover with fresh water, and place a lump of ice on top. Let stand for one hour.
  3. 3 Drain in a colander and wipe dry with a towel.
  4. 4 Fry in boiling fat in small batches until brown and crisp, ensuring they do not stick together.
  5. 5 Drain on paper towels, sprinkle with salt, and serve.
