Thin Milk-Based Cornmeal Griddle Cakes
Ingredients
- 1 quart milk
- 3 eggs
- salt to taste
- corn meal (enough to make a thin batter)
- 1 tablespoon wheat flour
Method
- 1 Combine milk, eggs, salt, and corn meal in a bowl, adding enough corn meal to create a thin batter.
- 2 Stir in the wheat flour to help bind the cakes.
- 3 Beat the mixture well until smooth.
- 4 Pour small amounts of batter onto a hot griddle to form small cakes.
- 5 Cook until bubbles form, then flip and cook until golden brown.
- 6 Serve hot with butter.
