Thick Sliced Potato Stew With Egg Yolk
Ingredients
- 4 cups cold, underboiled potatoes, cut into thick slices
- 1 ½ tbsp butter
- 1 ½ tbsp flour
- 1 cup broth
- 1 tbsp chopped parsley
- Salt and pepper to taste
- 1 egg yolk
- 1 tsp cold water
- Lemon juice
Method
- 1 Dredge flour into melted butter in a saucepan. Gradually stir in broth and bring to a boil.
- 2 Add potatoes, parsley, salt, and pepper. Stew for 3-4 minutes.
- 3 Remove from heat. Whisk egg yolk with cold water and lemon juice, then stir into the hot potato mixture until thickened.
- 4 Transfer to a serving dish and serve immediately.
