Thick Sliced Potato Stew With Egg Yolk

Ingredients

  • 4 cups cold, underboiled potatoes, cut into thick slices
  • 1 ½ tbsp butter
  • 1 ½ tbsp flour
  • 1 cup broth
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 1 egg yolk
  • 1 tsp cold water
  • Lemon juice

Method

  1. 1 Dredge flour into melted butter in a saucepan. Gradually stir in broth and bring to a boil.
  2. 2 Add potatoes, parsley, salt, and pepper. Stew for 3-4 minutes.
  3. 3 Remove from heat. Whisk egg yolk with cold water and lemon juice, then stir into the hot potato mixture until thickened.
  4. 4 Transfer to a serving dish and serve immediately.
