Thick Creamy Celery Puree With Salt

Ingredients

  • 4 cups chopped celery
  • 1 quart milk
  • 1 heaping tablespoon flour
  • 1 tablespoon butter
  • 1 scant teaspoon salt

Method

  1. 1 Boil the chopped celery in water until soft. Reserve the cooking water.
  2. 2 Rub the cooked celery through a fine sieve to create a smooth puree.
  3. 3 Combine the pureed celery, milk, flour, butter, and salt in a pot.
  4. 4 Boil the mixture, stirring constantly, until it thickens to the consistency of cream.
