Thick Creamy Celery Puree With Salt
Ingredients
- 4 cups chopped celery
- 1 quart milk
- 1 heaping tablespoon flour
- 1 tablespoon butter
- 1 scant teaspoon salt
Method
- 1 Boil the chopped celery in water until soft. Reserve the cooking water.
- 2 Rub the cooked celery through a fine sieve to create a smooth puree.
- 3 Combine the pureed celery, milk, flour, butter, and salt in a pot.
- 4 Boil the mixture, stirring constantly, until it thickens to the consistency of cream.
