Tarragon Vinaigrette With Hard Boiled Eggs
Ingredients
- 2 fresh eggs
- 1 tbsp cold water
- 2 tbsp oil
- 1 tsp salt
- 1 tsp powdered sugar
- 1 tsp prepared mustard
- 2 tbsp common vinegar
- 2 tbsp tarragon vinegar
- Lettuce, pepper grass, chervil, cress (for serving)
Method
- 1 Boil eggs for 10 minutes, cool in water, then separate yolks into a bowl.
- 2 Add 1 tbsp cold water to yolks and rub with a wooden spoon until dissolved.
- 3 Stir in oil, salt, sugar, and mustard until the mixture is smooth.
- 4 Mix in common and tarragon vinegar, then pour over dressed greens.
- 5 Garnish with egg white rings and young scallions.
