Tarragon Vinaigrette With Hard Boiled Eggs

Ingredients

  • 2 fresh eggs
  • 1 tbsp cold water
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp powdered sugar
  • 1 tsp prepared mustard
  • 2 tbsp common vinegar
  • 2 tbsp tarragon vinegar
  • Lettuce, pepper grass, chervil, cress (for serving)

Method

  1. 1 Boil eggs for 10 minutes, cool in water, then separate yolks into a bowl.
  2. 2 Add 1 tbsp cold water to yolks and rub with a wooden spoon until dissolved.
  3. 3 Stir in oil, salt, sugar, and mustard until the mixture is smooth.
  4. 4 Mix in common and tarragon vinegar, then pour over dressed greens.
  5. 5 Garnish with egg white rings and young scallions.
