Tarragon Remoulade Sauce
Ingredients
- 2 hard-boiled egg yolks
- 1 raw egg yolk
- 1 pinch salt
- 1 pinch pepper
- 1 tsp mustard
- 1 cup olive oil
- 3 tbsp tarragon vinegar
- 3 tbsp cider vinegar
- 1 tsp minced parsley
Method
- 1 In a bowl, mix hard-boiled egg yolks, raw egg yolk, salt, pepper, and mustard.
- 2 Place bowl in a pan of ice. Gradually add olive oil while beating constantly until smooth and thick.
- 3 Stir in tarragon vinegar, cider vinegar, and minced parsley.
