Tarragon Mayonnaise
Ingredients
- 2 egg yolks
- 1/2 cup salad oil
- 2 tbsp tarragon vinegar
- Salt and pepper to taste
Method
- 1 Place egg yolks in a bowl. If it is summer, place the bowl on ice to keep the mixture cold.
- 2 Whisk the yolks vigorously. Add the oil drop by drop while whisking constantly until the sauce thickens.
- 3 Once the mixture is thick, continue adding the remaining oil in a slow, steady stream while whisking.
- 4 Stir in the tarragon vinegar and season with salt and pepper. Adjust seasoning to taste.
