Tarragon Mayonnaise

Ingredients

  • 2 egg yolks
  • 1/2 cup salad oil
  • 2 tbsp tarragon vinegar
  • Salt and pepper to taste

Method

  1. 1 Place egg yolks in a bowl. If it is summer, place the bowl on ice to keep the mixture cold.
  2. 2 Whisk the yolks vigorously. Add the oil drop by drop while whisking constantly until the sauce thickens.
  3. 3 Once the mixture is thick, continue adding the remaining oil in a slow, steady stream while whisking.
  4. 4 Stir in the tarragon vinegar and season with salt and pepper. Adjust seasoning to taste.
