Tapioca Pudding With Vanilla
Ingredients
- 1/4 cup pearl tapioca
- 1 cup water
- 1 pint whole milk
- 3 tbsp sugar
- 1 tsp vanilla extract
- 2 eggs
- pinch of salt
Method
- 1 Soak tapioca in water for 2 hours.
- 2 Place soaked tapioca in a double boiler with milk and salt; heat until boiling.
- 3 Beat egg yolks until creamy, then whisk in a small amount of the hot milk mixture to temper.
- 4 Pour the tempered egg mixture back into the boiler and stir constantly until thickened.
- 5 Remove from heat, stir in vanilla, and gently fold in stiffly beaten egg whites.
- 6 Serve very cold in a glass bowl.
