Tapioca Pudding With Vanilla

Ingredients

  • 1/4 cup pearl tapioca
  • 1 cup water
  • 1 pint whole milk
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • pinch of salt

Method

  1. 1 Soak tapioca in water for 2 hours.
  2. 2 Place soaked tapioca in a double boiler with milk and salt; heat until boiling.
  3. 3 Beat egg yolks until creamy, then whisk in a small amount of the hot milk mixture to temper.
  4. 4 Pour the tempered egg mixture back into the boiler and stir constantly until thickened.
  5. 5 Remove from heat, stir in vanilla, and gently fold in stiffly beaten egg whites.
  6. 6 Serve very cold in a glass bowl.
