Ingredients

  • 1/2 cup pearl tapioca or sago
  • 3 cups water
  • 1/2 lb dried apricots, prunes, dates, or raisins
  • 1/8 teaspoon salt
  • 2 tablespoons fat
  • 1/2 cup corn syrup

Method

  1. 1 Soak fruit in water for 1 hour.
  2. 2 Add tapioca, salt, fat, and corn syrup to the fruit and water.
  3. 3 Cook directly over fire for 5 minutes, then over hot water until clear, about 45 minutes.
