Tapioca Pudding With Dried Fruit
Ingredients
- 1/2 cup pearl tapioca or sago
- 3 cups water
- 1/2 lb dried apricots, prunes, dates, or raisins
- 1/8 teaspoon salt
- 2 tablespoons fat
- 1/2 cup corn syrup
Method
- 1 Soak fruit in water for 1 hour.
- 2 Add tapioca, salt, fat, and corn syrup to the fruit and water.
- 3 Cook directly over fire for 5 minutes, then over hot water until clear, about 45 minutes.
