Taco Salad With Chili Beef And Yogurt Dressing
Ingredients
- 1/4 pound lean ground beef
- 1 1/2 teaspoons ground cumin (optional)
- 1 tablespoon chili powder
- 1 cup kidney or pinto beans (drained)
- 1/2 head lettuce (torn)
- 1 small onion (diced)
- 2 medium fresh tomatoes (cut up)
- 1 can corn (15.2 oz, drained)
- 1/2 cup cheddar cheese (shredded)
- 2 cups light tortilla chips (broken)
- 1/2 cup non-fat yogurt
- 1/2 cup chunky salsa
Method
- 1 Brown ground beef and drain any fat.
- 2 Add beans, cumin, and chili powder; heat through.
- 3 Toss lettuce, tomatoes, onion, and cheese in a large bowl.
- 4 Spoon meat and bean mixture over salad; top with broken tortilla chips.
- 5 Mix yogurt and salsa to make dressing; serve on the side.
