Syrup Pancake Muffins

Ingredients

  • 1 ½ cups milk
  • 1 egg
  • 1 tsp salt
  • 2 tbsp syrup
  • 2 tbsp shortening
  • 2 ¾ cups flour
  • 5 tsp baking powder

Method

  1. 1 Combine milk, egg, salt, syrup, and shortening in a bowl.
  2. 2 Add flour and baking powder; beat mixture until smooth.
  3. 3 Grease a griddle and rings, or grease muffin pans/cups.
  4. 4 For griddle: Place rings on hot griddle, half-fill with batter.
  5. 5 Bake until risen and nearly dry, then turn and bake 18 min total.
  6. 6 For oven: Bake in hot oven (425°F) for 15 minutes.
