Syrup Pancake Muffins
Ingredients
- 1 ½ cups milk
- 1 egg
- 1 tsp salt
- 2 tbsp syrup
- 2 tbsp shortening
- 2 ¾ cups flour
- 5 tsp baking powder
Method
- 1 Combine milk, egg, salt, syrup, and shortening in a bowl.
- 2 Add flour and baking powder; beat mixture until smooth.
- 3 Grease a griddle and rings, or grease muffin pans/cups.
- 4 For griddle: Place rings on hot griddle, half-fill with batter.
- 5 Bake until risen and nearly dry, then turn and bake 18 min total.
- 6 For oven: Bake in hot oven (425°F) for 15 minutes.
