Syrup Baked Cornbread

Ingredients

  • 2 cups boiling water
  • ¾ cup cornmeal
  • 1 tsp salt
  • 6 tbsp syrup
  • 3 tbsp shortening
  • 1 ½ cups sour milk
  • 1 ¼ tsp baking soda
  • 6 tbsp flour

Method

  1. 1 Place boiling water, cornmeal, and salt in a saucepan. Stir to blend and free from lumps, then cook for ten minutes.
  2. 2 Turn mixture into a mixing bowl. Add syrup, shortening, sour milk, baking soda (dissolved in milk), and flour. Beat to mix.
  3. 3 Pour batter into a hot, well-greased baking pan to a depth of one-quarter inch.
  4. 4 Bake in a hot oven (425°F) for eighteen minutes. Cut into squares and serve.
