Sweet Shortcrust Pie Dough

Ingredients

• 4 cups sifted flour
• 1 cup butter
• 1 pinch salt
• 3 heaping teaspoons granulated sugar
• 2 tablespoons lemon juice
• 4 tablespoons ice water
• 2 egg yolks

Method

1. 1 Rub butter, flour, salt, and sugar together thoroughly.
2. 2 Add egg yolks, lemon juice, and ice water.
3. 3 Work all ingredients together into a smooth paste.
4. 4 Place dough on a pastry board and divide into four equal parts.
5. 5 Roll each part to the size required for your pie plates.
