Sweet Potato Raisin Cookies

Ingredients

• 1 cup brown sugar
• 4 tablespoons shortening
• 1 cup mashed sweet potatoes
• 1 ½ cups flour
• 1 teaspoon baking powder
• ½ teaspoon nutmeg
• ¾ cup raisins
• 1 egg

Method

1. 1 Cream the brown sugar and shortening well.
2. 2 Add the mashed sweet potatoes, egg, flour, baking powder, nutmeg, and raisins. Work to a smooth dough.
3. 3 Roll out the dough on a floured pastry board to one-quarter inch thick.
4. 4 Cut into shapes and bake for eight minutes in a hot oven (425°F).
