Sweet Potato Pie With Brown Sugar Crust
Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon sugar
- 1/3 cup non-fat milk
- 2 tablespoons vegetable oil
- 1/4 cup white sugar
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 large egg, beaten
- 1/4 cup non-fat evaporated milk
- 1 teaspoon vanilla extract
- 3 cups cooked sweet potatoes, mashed
Method
- 1 Preheat oven to 350°F.
- 2 Combine flour and sugar in a bowl.
- 3 Add milk and oil; stir with a fork until mixed.
- 4 Form pastry into a smooth ball.
- 5 Roll pastry between two 12-inch squares of waxed paper.
- 6 Invert crust into a pie plate.
- 7 Combine sugars, salt, nutmeg, and egg.
- 8 Add evaporated milk and vanilla; stir.
- 9 Mix in mashed sweet potatoes.
- 10 Pour filling into pie shell.
- 11 Bake for 60 minutes until golden brown.
- 12 Cool and cut into 16 slices.
