Sweet Potato And Oatmeal Casserole
Ingredients
- 1 1/2 tablespoons 1% low-fat milk
- 1 teaspoon brown sugar
- 1 teaspoon ground cinnamon
- 2 3/4 cups quick cooking oats, dry
- 15 ounces low-sodium sweet potatoes, drained and chopped
Method
- 1 Preheat oven to 350°F.
- 2 In a small bowl, combine milk, brown sugar, cinnamon, and oats. Mix well and set aside.
- 3 Place chopped sweet potatoes in a medium-sized baking pan to cover the bottom.
- 4 Spread the oatmeal mixture evenly over the sweet potatoes.
- 5 Bake for 20 minutes. Serve hot or refrigerate and serve cold.
