Sweet Cider Rice Pudding With Raisins

Ingredients

  • 1/4 cup rice
  • 3 cups water
  • 1 small stick cinnamon
  • 1/2 cup raisins, stoned
  • 2 egg yolks
  • 1 heaping tablespoon sugar
  • 1/2 cup sweet cider
  • 2 tablespoons sherry (optional)

Method

  1. 1 Combine rice, water, and cinnamon stick in a pot. Bring to a boil and simmer for nearly 1 hour.
  2. 2 Add raisins and cook for 15 minutes until rice is tender. Remove from heat.
  3. 3 Whisk egg yolks and sugar until white and creamy. Stir in cider.
  4. 4 Temper the egg mixture by stirring in a little hot soup. Pour back into the pot and mix rapidly. Serve immediately, optionally with sherry.
