Sweet Cider Rice Pudding With Raisins
Ingredients
- 1/4 cup rice
- 3 cups water
- 1 small stick cinnamon
- 1/2 cup raisins, stoned
- 2 egg yolks
- 1 heaping tablespoon sugar
- 1/2 cup sweet cider
- 2 tablespoons sherry (optional)
Method
- 1 Combine rice, water, and cinnamon stick in a pot. Bring to a boil and simmer for nearly 1 hour.
- 2 Add raisins and cook for 15 minutes until rice is tender. Remove from heat.
- 3 Whisk egg yolks and sugar until white and creamy. Stir in cider.
- 4 Temper the egg mixture by stirring in a little hot soup. Pour back into the pot and mix rapidly. Serve immediately, optionally with sherry.
